With enough flavor and crunch, you won’t even notice you’re eating vegetables. This recipe has tons of variations; start with this basic plan.
Ingredients:
Any combination of vegetables, chopped. (Root vegetables such as sweet potatoes, onions, and carrots work great, along with broccoli, Brussels sprouts, zucchini, summer squash, onions, cauliflower, asparagus, or bell peppers.)
Olive oil
Sea salt and fresh cracked pepper
Other herbs and spices, to taste
Preparation:
Preheat oven to 425 degrees. Toss chopped veggies in a bowl with 3 tablespoons of olive oil (less if using a smaller amount of vegetables) plus salt and pepper, to taste. Spread evenly on a large baking sheet. Roast for 30-40 minutes, stirring halfway through.
Mix it up! Consider adding these additional flavors to your olive oil mixture:
Chopped rosemary
Minced garlic
3 Tbsps. soy sauce
Juice of one lemon
Grated Parmesan cheese
